My Mom owned a small restaurant, and her Hush Puppies were so good customers would order an extra serving! I tweaked the ingredients to make these without frying, to save on calories.

- 1 cup martha white buttermilk cornbread mix
- 1 - large egg
- 2/3 cup milk
- 1/4 cup oil
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/3 cup diced fresh onion
- 1/3 cup diced fresh bell pepper
How To Make gramma jan's hush puppy muffins

Step 1Preheat oven to 400°F Spray a 12 count miniature muffin tin with cooking spray.

Step 2Using a whisk, blend egg, milk, and oil together in small bowl. Add cornbread mix, baking powder, and baking soda. Continue to whisk while adding onion and bell pepper. Pour or spoon into mini muffin tins sprayed with cooking spray.

Step 3Bake at 400° for 15 minutes. Flip muffins out onto cooling rack.
