If you are a lover of baked beans, you probably have your own version of doctoring up a can of baked beans. When I was a kid, we used pork and beans. This is my personal way of adding little bits of things to add up to a marvelous side dish. If you opt to use olive oil instead of bacon fat, this recipe is totally Vegan. I used Bush's Home Style Baked Beans when I prepared this recipe. The yield is 6 servings, so double the recipe for a larger crowd. I will make these for my next BBQ Rib Event.

Ingredients

  • 1 can baked beans (28oz)
  • 1/2 large onion, chopped
  • 1/2 large green bell pepper, chopped
  • 1 large carrot, scrubbed, grated
  • 2 tablespoons ketchup
  • 1 teaspoon dijon mustard
  • 1 teaspoon worcestershire sauce
  • 2 tablespoons real maple syrup
  • 1 1/2 tablespoons irish whiskey or bourbon
  • 1 tablespoon olive oil or bacon fat
  • 2 tablespoons water
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pinch ground cloves (don't add too much)
  • 1/4 teaspoon dry thyme, crushed
  • 1 tablespoon balsamic vinegar

How To Make gary's baked beans

  • Step 1
    Mix all ingredients except the balsamic vinegar in a large bowl. Use a rubber spatula to stir gently.
  • Step 2
    Transfer beans to a baking dish with a lid and bake covered in a slow oven (250 degrees) for 1 1/2 - 2 hours or until the onions are clear and cooked through.
  • Step 3
    Uncover beans and add balsamic vinegar, Stir well. Bake beans an additional 30-45 minutes, uncovered or until liquid reduces to your liking.
  • Step 4
    Remove from oven and cover with lid on counter. Let rest for 20-30 minutes, while you finish up the rest of your meal. Serve in individual crocks/ramekins. Offer a small spoon .
