Simple and healthy alternative to rice or potatoes. Goes great with any grilled, roasted or sautéed meat. Great base recipe you can customize by adding herbs, spices or vegetables. We like to add some sliced or slivered almonds sometimes. Enjoy!

- 1 tablespoon olive oil
- 2 - garlic cloves, smashed but still whole
- 1 cup farro
- 3 cups chicken broth, non-fat
How To Make easy and healthy garlic farro

Step 1In a medium saucepan over medium heat warm olive oil and garlic until fragrant. Do not brown. Add the farro and let it toast in the olive oil until it starts to look golden, stirring often. Add the chicken broth and increase the heat to high bringing it to a boil.

Step 2Reduce heat. Cover with a tight-fitting lid and simmer for 18 minutes. Remove from heat and wait 5 minutes before removing lid.

Step 3Remove lid. Remove garlic cloves and fluff with a fork. Serve warm. Reheats well. Freezes well.
