Ingredients
- 3/4 pound fresh green beans
- 1/4 cup sugar
- 1/2 cup apple cider vinegar
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
- 2 stalks celery chopped
- 1/2 red pepper chopped
- 1/3 cup finely chopped red onion
- 1 can lima bean drained and rinsed
- 1 can garbanzo beans drained and rinsed
- 1 can kidney beans drained and rinsed

Step 1Trim green beans. Bring a large pot of water to a boil and cook green beans until crisp tender; 3-4 minutes. Plunge into ice bath to stop the cooking process. When cooled drain well and cut into one inch pieces.

Step 2In a large bowl whisk together cider vinegar, sugar, olive oil, salt and pepper. Add celery, red pepper, red onions, Lima beans, garbanzo beans, kidney beans and green beans. Stir to coat and chill for several hours. This recipe tastes best when allowed to marinate overnight. Stir several times to make sure the beans get down in the dressing.
