Ingredients

  • 2 tablespoons toasted sesame oil
  • 4 cloves garlic, minced
  • 2 tablespoons white sesame seeds
  • 12 ounces frozen edamame, shelled and thawed
  • 1 lemon, juiced
  • 1/2 teaspoon salt
  • 1/2 cup carrot matchsticks
  • 1/2 head red cabbage, shredded
  • black sesame seeds for garnish

How To Make edamame salad

  • Step 1
    Place the oil in a pan and add the garlic and sesame seeds. Cook about 3 minutes until the garlic sizzles but does not burn.
  • Step 2
    Add the edamame to the pan, cover, and let it sit 4 or 5 minutes.
  • Step 3
    Remove the cover and cook. Increase the heat and cook until the edamame sizzles, about 5 more minutes.
  • Step 4
    Remove from the heat and add the juice of 1 lemon. Stir in the carrots and cabbage.
  • Step 5
    Taste and season with salt. Garnish with black sesame seeds.
