It's a take on enchiladas. This dish cooks up quick and easy and is very delicious. My family loves this when we need to make something fast and don't have the time to make the real thing.

  • 1/4 c
    vegetable oil
  • 1 pkg
    corn tortillas (12)
  • 1 tsp
    garlic salt
  • 1 can(s)
    el pato tomatoe sauce
  • 1/2 c
    colby cheese
  • 3/4 c
    lettuce, chopped fine
  • 1 can(s)
    black olives, chopped
  • 1/2 tsp
    oregano, dried
  • 1/4 c
    onions, chopped fine (optional)

How to Make EASY CHILAQUILAS (Enchiladas)


  1. In a pan add oil and heat till hot (medium heat)
  2. Tear up corn tortillas and place in pan with hot oil. Sprinkle with garlic salt and toss in oil until corn tortillas start to get a golden brown and a little crispy. Stirring constantly.
  3. Add can of El Pato Tomatoe Sauce, stir.
  4. Top with cheese. Take off heat and top with lettuce and olive mixture.
  5. Serve as a side dish with meat or chicken or as a main dish topped with a fried egg.
