Ingredients
- 1/2 cup bulgur
- 1/2 cup water
- 1 tablespoon tomato paste
- 1 tablespoon olive oil
- 1 tablespoon pomegranate molasses
- 1 tablespoon lemon juice
- 1 medium tomato, chopped
- 1 cucumber, peeled and chopped
- 1/2 can hearts of palm, drained and chopped
- 2 scallions, chopped
- 2 tablespoons fresh parsley, chopped
- salt and pepper
How To Make cucumber & tomato bulgur bowl with hearts of palm

Step 1Mix the bulgur with boiling water. Let sit until it absorbs all the water. Meanwhile, mix together the tomato paste, olive oil, pomegranate molasses and lemon juice. Set aside.

Step 2Mix the tomato, cucumber and hearts of palm together. Stir in the green onions and parsley.

Step 3Mix in the bulgur once cooled a bit. Pour the dressing over top and season with salt and pepper to taste.
