cranberry sausage holiday stuffing
I've always disliked stuffing until one of my best friends shared her recipe and now I love making this every holiday. It's full of flavor and you can make it as a side to take to a holiday gathering.

Ingredients
- 2 packages pepperidge farms cornbread stuffing mix
- 2 cups chicken broth
- 1 cup butter or margarine
- 1 cup red bell pepper, chopped
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped
- 1 pound jimmy dean sausage, sage
- 2 eggs, slightly beaten
- 1 teaspoon dried marjoram
- 1/4 teaspoon pepper
- 1 - 6 oz. packages dried cranberries
- 1 cup pecans, chopped
How To Make cranberry sausage holiday stuffing

Step 1Prepare stuffing mix in a large bowl according to package directions, using chicken broth and ½-cup butter.

Step 2In a medium size skillet, melt the remaining ½-cup butter. Add red pepper, onion, celery, pecans and dried cranberries; cook over medium heat until onion is tender. Add to stuffing.

Step 3In same skillet cook sausage until well browned; add to cornbread mixture with pan drippings and remaining ingredients. Mix to blend well. Makes 10-cups.

Step 4NOTE: This can be made a day ahead! Follow all directions but leave out the eggs until ready to stuff. You can also make it as a side dish or even in muffin tins to make individual servings.
