I've always disliked stuffing until one of my best friends shared her recipe and now I love making this every holiday. It's full of flavor and you can make it as a side to take to a holiday gathering.

Ingredients

  • 2 packages pepperidge farms cornbread stuffing mix
  • 2 cups chicken broth
  • 1 cup butter or margarine
  • 1 cup red bell pepper, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1 pound jimmy dean sausage, sage
  • 2 eggs, slightly beaten
  • 1 teaspoon dried marjoram
  • 1/4 teaspoon pepper
  • 1 - 6 oz. packages dried cranberries
  • 1 cup pecans, chopped

How To Make cranberry sausage holiday stuffing

  • Step 1
    Prepare stuffing mix in a large bowl according to package directions, using chicken broth and ½-cup butter.
  • Step 2
    In a medium size skillet, melt the remaining ½-cup butter. Add red pepper, onion, celery, pecans and dried cranberries; cook over medium heat until onion is tender. Add to stuffing.
  • Step 3
    In same skillet cook sausage until well browned; add to cornbread mixture with pan drippings and remaining ingredients. Mix to blend well. Makes 10-cups.
  • Step 4
    NOTE: This can be made a day ahead! Follow all directions but leave out the eggs until ready to stuff. You can also make it as a side dish or even in muffin tins to make individual servings.
