cornbread dressing

This was my grandmother's cornbread dressing recipe. It is a staple every single holiday. She used to make the chicken stock from scratch (as does my mother-in-law when making this). However, I'm going to try to make it soon with store bought to see if I can tell a dramatic difference.

Ingredients

  • 1 - pan cooked cornbread
  • 4 cups chicken stock
  • 1 bunch green onions, chopped
  • 1 can creamed corn
  • 1 - small onion, chopped
  • 3 tablespoons butter
  • 4-5 - eggs
  • 1/4 cup parsley
  • - salt & pepper, to taste

How To Make cornbread dressing

  • Step 1
    In a large bowl, crumble cornbread finely. Pour stock over the cornbread.
  • Step 2
    Saute green onions and onion in butter for 5 minutes until onions are clear. Pour into cornbread mixture.
  • Step 3
    Add eggs, parsley, salt and pepper. Mix well.
  • Step 4
    Pour into large greased casserole dish.
  • Step 5
    Bake at 350 for 45 minutes, until center is firm.
