Maque Choux is as old as New Orleans, going back over 300 years. This dish had been lost to the restaurant world until Commanders Palace brought it back.

Ingredients

  • 1/4 pound bacon, cut into 1/4 inch strips
  • 6 cloves garlic, minced
  • 1/2 small onion, small dice
  • 1 small bell pepper, in small dice
  • 1 hot pepper, minced (to taste)
  • 1/4 pound small okra, thinly sliced
  • 8 ears fresh corn, kernels removed from cobs
  • kosher salt & black pepper to taste
  • 1 bunch green onions, sliced thin
  • 1 tablespoon butter

How To Make commanders palace maque choux

  • Step 1
    Render the fat from the bacon in a large skillet over high heat for about 3 minutes, or until crisp. Remove with a slotted spoon and let drain on paper towels.
  • Step 2
    Add the garlic and onion to the hot bacon fat, and saute until brown, stirring constantly, for about 2-3 minutes. Add the peppers and stir for about 3 minutes. Add the okra and cook for about 2 minutes, stirring constantly. Add the corn and cook for 5 minutes or until tender. If the pan gets too hot, reduce the heat.
  • Step 3
    Season with salt and pepper to taste, then transfer to a serving dish. Stir in the green onions and the butter. Garnish with the crisp bacon.
