Ingredients
- 1/4 pound bacon, cut into 1/4 inch strips
- 6 cloves garlic, minced
- 1/2 small onion, small dice
- 1 small bell pepper, in small dice
- 1 hot pepper, minced (to taste)
- 1/4 pound small okra, thinly sliced
- 8 ears fresh corn, kernels removed from cobs
- kosher salt & black pepper to taste
- 1 bunch green onions, sliced thin
- 1 tablespoon butter
How To Make commanders palace maque choux

Step 1Render the fat from the bacon in a large skillet over high heat for about 3 minutes, or until crisp. Remove with a slotted spoon and let drain on paper towels.

Step 2Add the garlic and onion to the hot bacon fat, and saute until brown, stirring constantly, for about 2-3 minutes. Add the peppers and stir for about 3 minutes. Add the okra and cook for about 2 minutes, stirring constantly. Add the corn and cook for 5 minutes or until tender. If the pan gets too hot, reduce the heat.

Step 3Season with salt and pepper to taste, then transfer to a serving dish. Stir in the green onions and the butter. Garnish with the crisp bacon.
