Coffee Baked Beans

One morning we had a little coffee left in our coffee pot and I was planning to make baked beans for dinner so I thought why waste the coffee. So I just tweaked my baked bean recipe a bit and came up with this combination. I paired it with roasted Brussels sprouts and seared salmon and it was a huge hit with my whole family!

4 slice
bacon, chopped
sweet onion, chopped
28 oz
baked beans (1 large can)
1/4 c
bbq sauce
1/4 c
brown sugar
1 Tbsp
apple cider vinegar
1 Tbsp
dijon mustard
1/4 c
brewed coffee


1Preheat the oven to 350 degrees
2Cook the chopped bacon in a pot over medium heat until browned (about 10 minutes); remove the bacon with a slotted spoon, reserving the bacon grease in the pan, and drain the bacon on paper towels
3Add the chopped onions to the pot with the bacon grease and cook for 15 minutes over medium-low heat, or until caramelized
4Remove the pot from the heat and add the bacon back to the pot as well as the remaining ingredients and stir it all together
5Pour the beans into a greased 8" baking dish and bake at 350 degrees for 2 hours
6Remove the beans from the oven and let sit for 5 minutes before serving
