Ingredients
- 3 ounces spanish chorizo, diced
- 1 can black beans, rinsed and drained (15 ounce)
- 1 tablespoon olive oil
- 1/3 cup chopped onion
- 1 teaspoon minced garlic
- 1/3 cup diced fresh mild wax peppers, marconi peppers or other mild sweet garden peppers
- 1 tablespoon tomato paste
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon dried basil
- - salt and black pepper to taste
- 1 large fresh tomato, diced
- 1/2 cup water
- 1 tablespoon chopped fresh cilantro
How To Make chorizos con frijoles

Step 1Brown the sausage with the onion, garlic and diced peppers in olive oil.

Step 2Stir in the beans, tomato paste, balsamic vinegar, basil, salt, pepper, tomato and water.

Step 3Simmer for a few minutes until tomatoes soften a little and the beans thicken up. Stir in the cilantro.
