Argentine style black bean side dish (serves 4). Can also be a main dish for two if served with some rice.

Ingredients

  • 3 ounces spanish chorizo, diced
  • 1 can black beans, rinsed and drained (15 ounce)
  • 1 tablespoon olive oil
  • 1/3 cup chopped onion
  • 1 teaspoon minced garlic
  • 1/3 cup diced fresh mild wax peppers, marconi peppers or other mild sweet garden peppers
  • 1 tablespoon tomato paste
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon dried basil
  • - salt and black pepper to taste
  • 1 large fresh tomato, diced
  • 1/2 cup water
  • 1 tablespoon chopped fresh cilantro

How To Make chorizos con frijoles

  • Step 1
    Brown the sausage with the onion, garlic and diced peppers in olive oil.
  • Step 2
    Stir in the beans, tomato paste, balsamic vinegar, basil, salt, pepper, tomato and water.
  • Step 3
    Simmer for a few minutes until tomatoes soften a little and the beans thicken up. Stir in the cilantro.
