It was a toss up when asked for my birthday meal, between Chinese Coleslaw and layered salad. Luckily, we had multiple opportunities over the summer in Eagle River to manage to have both, and often more than once!

Method:
No-Cook or Other

Ingredients

  • 1 lb
    cabbage
  • 4-6
    green onions and tops
  • 2 pkg
    chicken flavor ramen noodles, crushed
  • 4 oz
    toasted slivered almonds
  • 5 oz
    salted roasted sunflower seeds
  • 1/3 c
    dark vinegar
  • 1/2 c
    salad oil
  • 1/2 c
    sugar
  • 2 pkg
    flavor from ramen noodles

How to Make Chinese Coleslaw, original

Step-by-Step

  1. Mix cabbage and onions and set aside in large bowl with lid.
  2. Mix noodles, almonds and sunflower seeds and set aside.
  3. Mix vinegar, oil, sugar and chicken flavoring in a jar.
  4. Combine at least 1/2 hour before serving to soften noodles. Although we liked it better when combining longer than that...and it is even better day 2!
