I was introduced to these by Dad's wife when they first met. I had never had them before but they are so yummy! Great with scrambled eggs on the side or any mexican dish!

Ingredients
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 package lawry's taco seasoning
- 1 can diced tomatoes
- 1 can green chiles (optional)
- 6 ounces tortilla chips
- 4 cups shredded monterey jack cheese
- 1 cup sour cream
- 1/2 cup shredded cheddar cheese
How To Make chilaquiles

Step 1In Lg skillet, heat oil. Add Onion and saute over medium heat until tender. Add Taco seasoning, tomatoes & Chiles and mix well.

Step 2Bring to a boil; reduce heat to low and simmer, uncovered, 10 to 15 mins, stirring occasionally.

Step 3In lightly greased 2 quart casserole dish, layer 1/2 each of tortilla chips, tomato mixture and monterey jack cheese. Repeat layers; top with sour cream.

Step 4Bake at 350 for 30 mins. Sprinkle with cheddar cheese and bake 10 mins longer. Let Stand 15 mins before cutting into squares.
