chicken and cornbread dressing

This is a recipe I came across in our local paper. This makes for a great dressing for the holidays.

Ingredients
- - 4 to 6 chicken breast
- 1 cup chopped celery
- 1 cup chopped onions
- 1 bunch chopped green onions
- 1 cup chopped bell pepper
- 1 stick butter
- 2 - pans of cornbread
- 3 - slightly beaten eggs
- 1 1/2 cans chicken broth
How To Make chicken and cornbread dressing

Step 1Preheat oven to 350. Saute celery,onions,green onions, bell pepper in butter until onions are clear.

Step 2Bake 2 pans of cornbread (according to directions). Set aside and let cool. Crumble cornbread in large bowl and add celery mixture.

Step 3Boil chicken.Let cool, then shred chicken and add to cornbread mixture. You can add salt and pepper if desired. Stir in eggs and add chicken broth until it has consistency of oatmeal.

Step 4Pour into a greased 9x13 casserole. Bake at 350 for 30 minutes. Top with your favorite giblet gravy or cranberry sauce.
