Grits aren't just for breakfast! Although they are good then too. This recipe allows you to serve as a side at lunch or dinner too.

Ingredients

  • 3 3/4 cups water
  • 1/4 teaspoon salt
  • 3/4 cup regular grits, uncooked
  • 2 cups sharp cheddar cheese, shredded, divided
  • 1/4 cup butter
  • 1 large egg, beaten

How To Make cheese grits

  • Step 1
    Combine the water and the salt in a saucepan. Bring to a boil. Stir in the grits; cover and reduce the heat. Simmer for 10 minutes, stirring occasionally.
  • Step 2
    Add 1 1/2 cups cheese and the butter to the grits, stirring until the cheese and butter melts.
  • Step 3
    Gradually stir a small amount of the hot mixture into the beaten egg. Add to the remaining hot mixture.
  • Step 4
    Pour into a greased casserole dish and bake uncovered at 350 degrees for 45 to 50 minutes. Sprinkle the remaining cheese on top of the grits. Bake an additional 5 minutes or until the cheese melts. If you like spice sprinkle a little cayenne on top or serve with hot sauce.
