1head cauliflower broken into florets
1 cswiss cheese shredded
salt and pepper
chives for garnish
How To Make cauliflower and swiss mash
1Bring a pan of water to a boil. Add some salt and cauliflower florets. Cook until the cauiliflower is soft about 8 minutes.
2Drain add the cauliflower back to the pot and place over the heat for a few seconds to get it dry.
3Mash the cauliflower with the cheese, butter and enough milk to make a mashed potato consistency. Garnish with chives.
