Carolina Brunch Style Grits
1 cuncooked quick cooking grits
11 ozcan of mexicorn whole kernel corn, red peppers, drained
9 ozpkg frozen spinach, thawed
1 1/4 oztaco seasoning mix
2 Tbspchopped onions
2 Tbspmargarine or butter
8 ozpkg (2 cups) shredded cheddar cheese or mexican shredded cheese
How to Make Carolina Brunch Style Grits
- Heat oven to 350F. cook grits in water as directed on package.
- In ungreased 13x9 inch baking dish, combine cooked grits and all remaining ingredients except 1 cup of cheese; mix well. Sprinkle with remaining cup of cheese.
- Bake at 350F for 22-27 minutes until edges are bubbly and cheese is melted.
