Ingredients

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 3 stalks celery, chopped (about 1 cup)
  • 2 - green or red bell peppers, chopped (1 1/2 cups)
  • 1 teaspoon fresh thyme (1/2 teas. dried)
  • 1 tablespoon fresh basil (1 teas. dried)
  • 1/4 teaspoon black pepper, or to taste
  • 1 pinch salt, or to taste
  • 1 pinch cayenne pepper, or to taste
  • 2 cups chopped fresh tomato or 14 oz. canned tomato
  • 1 tablespoon honey or molasses
  • 1 tablespoon dijon mustard
  • 4 cups cooked black-eyed peas or butter beans (20 ounce frozen or 2 16-oz cans, drained)
  • - chopped green onion, garnish
  • - grated cheddar cheese, garnish

How To Make cajun skillet beans

  • Step 1
    Heat oil in heavy skillet and sauté onions and garlic until starting to soften.
  • Step 2
    Add peppers and celery and continue to sauté for about 5 minutes, stirring occasionally.
  • Step 3
    Add herbs and seasonings. Cover and cook for 5 minutes or until onions are golden. Stir occasionally.
  • Step 4
    Add tomatoes, honey or molasses, and mustard. Simmer for 5 more minutes.
  • Step 5
    Add beans, cover and stir occasionally until heated through. (10 - 20 minutes, depending if you use canned or frozen beans.)
  • Step 6
    Top with scallions and cheese, as desired. Serve.
