Ingredients
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 3 stalks celery, chopped (about 1 cup)
- 2 - green or red bell peppers, chopped (1 1/2 cups)
- 1 teaspoon fresh thyme (1/2 teas. dried)
- 1 tablespoon fresh basil (1 teas. dried)
- 1/4 teaspoon black pepper, or to taste
- 1 pinch salt, or to taste
- 1 pinch cayenne pepper, or to taste
- 2 cups chopped fresh tomato or 14 oz. canned tomato
- 1 tablespoon honey or molasses
- 1 tablespoon dijon mustard
- 4 cups cooked black-eyed peas or butter beans (20 ounce frozen or 2 16-oz cans, drained)
- - chopped green onion, garnish
- - grated cheddar cheese, garnish
How To Make cajun skillet beans

Step 1Heat oil in heavy skillet and sauté onions and garlic until starting to soften.

Step 2Add peppers and celery and continue to sauté for about 5 minutes, stirring occasionally.

Step 3Add herbs and seasonings. Cover and cook for 5 minutes or until onions are golden. Stir occasionally.

Step 4Add tomatoes, honey or molasses, and mustard. Simmer for 5 more minutes.

Step 5Add beans, cover and stir occasionally until heated through. (10 - 20 minutes, depending if you use canned or frozen beans.)

Step 6Top with scallions and cheese, as desired. Serve.
