Ingredients
- 4 large ripe firm tomatoes
- 1/4 cup dry sherry
- salt and pepper to taste
- 1 teaspoon dried oregano
- 8 tablespoons mayonnaise
- 1/4 cup freshly grated parmesan cheese
How To Make broiled sherried tomatoes

Step 1Preheat oven to 350 F

Step 2Cut tomatoes in half. Place cut-side up in a shallow baking dish. Prick with fork. Sprinkle with sherry, and let rest for a short time.

Step 3Sprinkle cut tomatoes with salt and pepper to taste. Bake for 5 minutes, or to desired doneness, and remove from oven.

Step 4Top the tomato halves with mayonnaise. Dust with the parmesan cheese. Turn oven to broil setting and broil until lightly browned. Serve immediately.
