Ingredients

  • 4 large ripe firm tomatoes
  • 1/4 cup dry sherry
  • salt and pepper to taste
  • 1 teaspoon dried oregano
  • 8 tablespoons mayonnaise
  • 1/4 cup freshly grated parmesan cheese

How To Make broiled sherried tomatoes

  • Step 1
    Preheat oven to 350 F
  • Step 2
    Cut tomatoes in half. Place cut-side up in a shallow baking dish. Prick with fork. Sprinkle with sherry, and let rest for a short time.
  • Step 3
    Sprinkle cut tomatoes with salt and pepper to taste. Bake for 5 minutes, or to desired doneness, and remove from oven.
  • Step 4
    Top the tomato halves with mayonnaise. Dust with the parmesan cheese. Turn oven to broil setting and broil until lightly browned. Serve immediately.
