Bread & Butter Pickles

This is a fav I keep going back to time and time again....delicious with just about anything, great on burgers, sandwiches or just on the side!!

16 c
unpeeled, regular cucumbers sliced thin
6 medium
onions sliced thin
1 large
red pepper seeded and slivered
1 large
green pepper, seeded and sliverd...this time i opted for 3 jalapeno peppers
1/2 c
coarse pickling salt
5 c
2 Tbsp
mustard seed
1 tsp
1 1/2 tsp
celery seed
3 c
white vinegar


1Place sliced cucumbers, onions and peppers in a large non metal bowl. Sprinkle the salt over top and mix. Cover and leave on your counter for 3 hours. After 3 hours drain well. Mix together the last 5 ingredients in a large pot. Bring to a boil, stirring occasionally until sugar is dissolved. Add all the cuke mixture and bring to a boil.
Ladle into hot sterilized jars filling to within 1 inch of top. pour the syrup from pot over the pickles.Seal
