black bean pot - frijoles ollo
Black beans are a delicious side to go with grilled meats. One of my childhood friend's dad was from Argentina and eating at their house was my first introduction to black beans. This recipe goes well over rice, too.

Ingredients
- 1 tablespoon olive oil
- 2 cups onion, chopped
- 3 cloves garlic, minced or grated
- 15 ounces black beans (1 can) drained
- 8 ounces tomato sauce
- 1 - tomato, seeded and diced
- 1 teaspoon cumin
- 1/4 teaspoon cayenne pepper ( or to taste)
- 1/2 - 1 teaspoons adobo seasoning
- 1/2 cup cilantro, chopped (save some to garnish when serving)
- 1/4 cup green onions, chopped
- - salt and pepper to taste
How To Make black bean pot - frijoles ollo

Step 1Heat the olive oil in a large pot over medium-high. Add onions until they are translucent, about 5 minutes. Add garlic and cook for an additional 2 minutes.

Step 2Add the black beans, tomato sauce, diced tomatoes, cumin, cayenne pepper and adobo; reduce heat to medium-low and simmer 5 minutes. Add 1/3 cup or so of the cilantro and simmer another 2 minutes. Stir in the green onions and remove from heat.

Step 3Season with salt and pepper to taste. Garnish with remaining cilantro.
