I love making this for Thanksgiving dinner. It tastes so much like pumpkin pie, but without the crust. Everyone loves it!

Ingredients

  • 1 lb can(s)
    pumpkin (2 cups)
  • 1 c
    sugar
  • 1 tsp
    vanilla extract
  • 1/2 tsp
    salt
  • 1 tsp
    cinnamon
  • 1/2 c
    flour
  • 2
    eggs
  • 1 pinch
    baking soda
  • 1 can(s)
    evaporated milk
  • ALSO

  • 1/2 stick
    margarine
  • 1/4 c
    sugar
  • 1/8 tsp
    cinnamon

How to Make Baked Pumpkin

Step-by-Step

  1. Beat eggs. Add everything else. Melt margarine in casserole dish. Pour in the mixture. Mix 1/4 cup sugar and 1/8 tsp cinnamon and sprinkle over top.
  2. Bake at 450 degrees 25 to 30 min.
    Custardy, brownish on outside, may crack, some wiggle in middle but will set.
