I love making this for Thanksgiving dinner. It tastes so much like pumpkin pie, but without the crust. Everyone loves it!

Ingredients

  • 1 lb can pumpkin (2 cups)
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup flour
  • 2 - eggs
  • 1 pinch baking soda
  • 1 can evaporated milk
  • ALSO
  • 1/2 stick margarine
  • 1/4 cup sugar
  • 1/8 teaspoon cinnamon

How To Make baked pumpkin

  • Step 1
    Beat eggs. Add everything else. Melt margarine in casserole dish. Pour in the mixture. Mix 1/4 cup sugar and 1/8 tsp cinnamon and sprinkle over top.
  • Step 2
    Bake at 450 degrees 25 to 30 min. Custardy, brownish on outside, may crack, some wiggle in middle but will set.
