- 2 tablespoons lemon juice, freshly squeezed if you can
- 1 tablespoon water
- 1 teaspoon dijon mustard
- 1/2 teaspoon minced fresh thyme
- 1 clove garlic, minced
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 6 cups arugula
- 1 - fennel bulb, thinly sliced
- 1/4 cup shaved parmesan cheese

Step 1Whisk together dressing of EVOO, lemon juice, water, mustard, thyme, garlic, salt, and pepper.

Step 2Toss together arugula and fennel. Pour on dressing and toss again to combine.
