This salad is an excellent side dish with just about any pasta based meal.

Ingredients

2 Tbsp
evoo
2 Tbsp
lemon juice, freshly squeezed if you can
1 Tbsp
water
1 tsp
dijon mustard
1/2 tsp
minced fresh thyme
1 clove
garlic, minced
1/8 tsp
salt
1/8 tsp
pepper
6 c
arugula
1
fennel bulb, thinly sliced
1/4 c
shaved parmesan cheese

Step-By-Step

1Whisk together dressing of EVOO, lemon juice, water, mustard, thyme, garlic, salt, and pepper.
2Toss together arugula and fennel. Pour on dressing and toss again to combine.
3Garnish with Parmesan cheese.
