This salad is an excellent side dish with just about any pasta based meal.

Ingredients

  • 2 tablespoons evoo
  • 2 tablespoons lemon juice, freshly squeezed if you can
  • 1 tablespoon water
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon minced fresh thyme
  • 1 clove garlic, minced
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 6 cups arugula
  • 1 - fennel bulb, thinly sliced
  • 1/4 cup shaved parmesan cheese

How To Make arugula and fennel parmesan salad

  • Step 1
    Whisk together dressing of EVOO, lemon juice, water, mustard, thyme, garlic, salt, and pepper.
  • Step 2
    Toss together arugula and fennel. Pour on dressing and toss again to combine.
  • Step 3
    Garnish with Parmesan cheese.
