This is an adopted recipe, with a few tweaks added and changes made.

Ingredients

  • 2 cups pinto beans, dried
  • 6 cups water
  • 1 - onion, thinly sliced
  • 6 - chicken bouillon cubes
  • 2 teaspoons red pepper flakes
  • 2 teaspoons garlic clove, minced
  • 2 ounces salt pork

How To Make all-day beans

  • Step 1
    Wash beans and discard any blemished beans.
  • Step 2
    In a heavy 3 to 4 quart saucepan or slow cooker, bring water to a boil; Drop in beans and cook briskly for 2 minutes.
  • Step 3
    Turn off heat, cover and soak for an hour.
  • Step 4
    Discard soaking water and replace with fresh water. Add onion, garlic, pepper flakes, bouillon, pork and bring to a boil over high heat; Reduce heat to its lowest setting and simmer tightly covered for 5 1/2 hours or until tender.
  • Step 5
    Add water as necessary - Salt can be added at the end if desired.
  • Step 6
    Goes good with hamburgers or barbecue - Also can be served in bowls with a mound of salsa on top.
