  • 7 LB - watermelon rind
  • 1 TBSP - slaked lime
  • 1 GAL - water
  • 4 LB - sugar
  • 1 PT - vinegar
  • 2 - cinnamon sticks, bag of cinnamon candy red hots

How To Make "watermelon rind pickles"

  • Step 1
    PEEL AND CUT THE RIND INTO 1 1/2 INCH PIECES,THEN SOAK OVERNIGHT IN MIXTURE OF LIME AND WATER.
  • Step 2
    WASH SEVERAL TIMES,THEN PLACE IN A LARGE COOKING POT.COVER WITH WATER AND COOK UNTIL TENDER,THEN DRAIN.MIX THE SUGAR,VINEGAR AND CINNAMON STICKS,RED HOTS.BRING TO A BOIL.COOL.POUR OVER THE RIND AND LET STAND OVERNIGHT.
  • Step 3
    BRING TO A BOIL AND BOIL UNTIL THE RIND IS TRANSPARENT.PACK THE RIND INTO HOT STERILIZED JARS,THEN FILL WITH HOT SYRUP.
  • Step 4
    SEAL THE JARS.
