watermelon rind
1 TBSP
slaked lime
1 GAL
water
4 LB
sugar
1 PT
vinegar

cinnamon sticks, bag of cinnamon candy red hots

How to Make "WATERMELON RIND PICKLES"

Step-by-Step

  • 1PEEL AND CUT THE RIND INTO 1 1/2 INCH PIECES,THEN SOAK OVERNIGHT IN MIXTURE OF LIME AND WATER.
  • 2WASH SEVERAL TIMES,THEN PLACE IN A LARGE COOKING POT.COVER WITH WATER AND COOK UNTIL TENDER,THEN DRAIN.MIX THE SUGAR,VINEGAR AND CINNAMON STICKS,RED HOTS.BRING TO A BOIL.COOL.POUR OVER THE RIND AND LET STAND OVERNIGHT.
  • 3BRING TO A BOIL AND BOIL UNTIL THE RIND IS TRANSPARENT.PACK THE RIND INTO HOT STERILIZED JARS,THEN FILL WITH HOT SYRUP.
  • 4SEAL THE JARS.
