Ingredients
- 2 pounds watermelon rind
- 1/3 cup pickling salt
- 8 cups water
- 4 cups sugar
- 2 cups white vinegar
- 4 cinnamon sticks broke in half
- 4 teaspoons whole allspice or cloves
- 1 lime sliced
- 24 marachino cherries drained
How To Make watermelon pickles

Step 1Trim the dark green part of the watermelon off and cut into small slices. Mix the 8 cups of water and pickling salt together. Soak the rind in the salt water overnight. Drain. Rinse the rind and place in a pan with just enough cold water to cover and cook until tender.

Step 2Drain and fill the jars with the watermelon rind. Mix the vinegar and sugar together with 2 cups water and cook until sugar is dissolved.

Step 3Add 1/2 stick of cinnamon to each jar. Add 1 tsp. of whole all spice to each jar. Add the lime slices to each jar and then add 6 marachino cherries to each jar.

Step 4Pour the vinegar sugar mixture into each jar leaving an inch head space. Cover tightly and water bath in boiling water for 15 minutes. Makes 4 pints
