Ingredients
- 1 can (20 oz) chunk pineapple in juice (undrained)
- 1 can (8 oz) crushed pineapple
- 1/3 cup sugar (can substitute splenda)
- 3 tablespoons all-purpose flour
- 1 cup (4 oz) shredded sharp cheddar cheese
- 1/2 cup ritz cracker crumbs
- 2 tablespoons butter, melted
How To Make pineapple gratin

Step 1Preheat oven to 350 - lightly grease shallow baking dish

Step 2Drain pineapple, reserving 3 tablespoons of juice

Step 3Combine reserved (3 tbls) pineapple juice, sugar and flour

Step 4Stir in pineapple chunks, crushed pineapple and cheese

Step 5Spoon into shallow, lightly greased baking dish.

Step 6Combine cracker crumbs and butter, sprinkle evenly over pineapple mixture

Step 7Bake 350 degree oven for 25 minutes or until bubbly

Step 8To double recipe - for 2 quarts - 7 1/2 x 12 casserole
