nunu's "danc'n orange" glazed & grilled pineapple

Put my mind in gear for my first adventure in grilling pineapple, which turned out to be a "huge success!" With that in mind, fixed it for our Lions Club Picnic and "everyone" wanted to know how I did it and was asking for the recipe. For a real treat, fix your next hamburger with a slice of pineapple, along with a slice of tomato and red onion ... it's fantastic!

Grilled fruit is a summertime favorite and this grilled pineapple needs to be a part of your menu. It's super tasty! With a hint of orange and a hint of chipotle, the glaze is fabulous. Most of the alcohol from the rum cooks off and adds a richness to the flavor. We love how the pineapple caramelizes with the grilling process. It would add a bit of extra flavor to a hamburger or make a fabulous summertime dessert.

Ingredients

  • 1 large fresh pineapple
  • 1/2 cup rum
  • 1/2 cup orange marmalade
  • 3/4 cup brown sugar
  • 6 tablespoons butter
  • 2 teaspoons vanilla
  • 1/4 teaspoon ground chipotle pepper
  • 1/2 teaspoon ground cinnamon

How To Make nunu's "danc'n orange" glazed & grilled pineapple

  • Slicing and coring the pineapple.
    Step 1
    Peel, core, and cut pineapple into 3/4-1 inch slices.
  • Rum, marmalade, brown sugar, butter, vanilla, chipotle pepper, and cinnamon in a saucepan.
    Step 2
    In a small saucepan mix together the rum, marmalade, brown sugar, butter, vanilla, chipotle pepper, and cinnamon. Note: Use 1/2 teaspoon of chipotle pepper for an added 'Kick'n Dance Step' if you wish.
  • Sugar dissolving in the pan.
    Step 3
    Heat and stir until the sugar is dissolved.
  • Placing the pineapple slices on the grill.
    Step 4
    On a pre-heated "hot" grill lightly oil the grill. Place pineapple slices on the grill.
  • Basting the pineapple with the glaze.
    Step 5
    With a basting brush, baste the pineapple slices with the 'Danc'n Orange' glaze while grilling.
  • Flipping the pieces of pineapple.
    Step 6
    Turn the slices over and baste the other side. Note: The recipe for the glaze/basting sauce is enough to handle the grilling of '3' fresh pineapples.
  • Continuing to baste and turn the pineapple.
    Step 7
    Continue basting and turning over the pineapple slices occasionally; grilling for 10-15 minutes.
  • Brushing more glaze onto the pineapple.
    Step 8
    Remove slices from the grill and paint some more glaze on them.
  • Grilled pineapple on a serving tray.
    Step 9
    Leave rings whole or cut each slice/ring in half and serve.
  • Grilled pineapple with melting vanilla ice cream.
    Step 10
    For a dessert, serve hot with a scoop of vanilla ice cream.
