1pineapple, peeled

3 Tbsphoney

2 Tbspfreshly squeezed lime juice

1 Tbspfresh mint, minced (optional)
How To Make grilled pineapple skewers

1Preheat grill on high. Slice off the top and bottom of the pineapple. Stand pineapple upright on cutting board; cut into quarters from top to bottom. Cut each quarter into 1/2-inch-thick slices. Thread three pineapple slices onto each skewer.

2In a small bowl, whisk together the honey and lime juice, and the mint, if using. Brush over the pineapple, reserving about half of the glaze.

3Coat pineapple with cooking spray. Grill the skewers for 2–3 minutes per side, or until it begins to brown. Brush with remaining glaze and serve.
