Ingredients
- 1 pineapple, peeled
- 3 tablespoons honey
- 2 tablespoons freshly squeezed lime juice
- 1 tablespoon fresh mint, minced (optional)
How To Make grilled pineapple skewers

Step 1Preheat grill on high. Slice off the top and bottom of the pineapple. Stand pineapple upright on cutting board; cut into quarters from top to bottom. Cut each quarter into 1/2-inch-thick slices. Thread three pineapple slices onto each skewer.

Step 2In a small bowl, whisk together the honey and lime juice, and the mint, if using. Brush over the pineapple, reserving about half of the glaze.

Step 3Coat pineapple with cooking spray. Grill the skewers for 2–3 minutes per side, or until it begins to brown. Brush with remaining glaze and serve.
