apple chutney
This was my Scottish grandmother's recipe. It was a favorite growing up that my Mom would serve with ham, turkey, or pork. My brothers & I loved it on a leftover ham or turkey sandwich. You can adjust the heat (cayenne pepper) to your taste.

Ingredients
- 6-8 large apples, cored, peeled, sliced
- 1 1/2 cups cider vinegar
- 2 medium onions, chopped
- 1 teaspoon ginger
- 1/2 teaspoon salt
- 1 teaspoon cayenne pepper (adjust for taste)
- 1 cup brown sugar (i prefer dark brown)

Step 1In large saucepan over medium heat, place apples & vinegar. Cook apples down. Add remaining ingredients and sImmer for 30 minutes. Place in air tight containers , keep refrigerated. I suppose you could can these as well, I just never have done that. This keeps well for several months in the fridge.
