Gouda cheese, grated; 4 oz. parmigiano-reggiano cheese, grated; 2 cups heavy cream; 1 cup whole milk; 1 stalk celery, diced; 1/2 white onion, diced; 1/2 bell pepper, diced; 2 tablespoons of parsley, minced; 1 tablespoon creole seasoning; 1 tablespoon black pepper; 1 tablespoon garlic powder; 1 tablespoon onion powder; 2 teaspoons paprika; 1 teaspoon cayenne pepper; 1 tablespoon Tabasco hot sauce; 1 cup of panko bread crumbs; 6 tablespoons extra virgin olive oil; 3 tablespoons of flour
