2 pounds deveined, (shells removed and tails left on) jumbo shrimp (16-20 per pound)

3 tablespoons salt
•
10 sprigs fresh thyme
•
3 bay leaves
•
2 teaspoons black peppercorns

1/2 teaspoon celery seeds
•
2 lemons, juiced, peels reserved and roughly chopped (you will only need 1/4 cup of this juice, save the rest in the refrigerator for another use)

8 cups ice

Cocktail Sauce Ingredients:
•
1 cup ketchup
•
1/4 cup prepared horseradish
•
1 teaspoon Worcestershire sauce
•
1 teaspoon lemon juice
•
1/2 teaspoon Old Bay seasoning
•
1/8 teaspoon cayenne pepper
