INGREDIENTS
1/2 cup + 2 TB freshly squeezed lime juice
1 lb raw shrimp (41/50 count) peeled and deveined
1 medium red onion, chopped
1/3 cup chopped fresh cilantro
2 TB ketchup
2 tsp Sriracha
2 TB extra virgin olive oil
1 cup grape tomatoes, quartered
1 cup diced and peeled jicama (or cucumber, if jicama is unavailable)
1 semi-firm avocado
kosher salt
Fresh lime slices
Corn chips for serving
