1 lb of Taro Root or Malanga or White Sweet Potato
1 lb of Carrots
1 lb of Baby Bok Choy with Stem and Leaves (about 1 large or 3 small)
1 large Yellow Onion, diced
4 Garlic Cloves, minced
1 ounce Ginger Root, minced
5 cups of Water
1 Tablespoon of Tamarind Concentrate
2 Tablespoons of Lemon Juice
2 teaspoons of Fish Sauce
2 teaspoons of Salt
1/2 teaspoon of Pepper
1 Large Tomato, quartered
2 Tablespoons of Cooking Fat (coconut oil, olive oil, ghee, lard)
(optional) 1 Hot Pepper for Garnish
