1 pound cold unsalted butter (cut into 1/2" cubes)

2 medium carrots (cut into 1/2" half moons)
2 celery ribs (halved lengthwise and cut on the bias into 1/2" thick pieces)
1 sprigs thyme
1 sprigs rosemary
1 leaves sage
Salt and pepper (to taste)
4 oz butter
1/4 cup flour
1 bay leaves
1 quart turkey/chicken stock
1 1/2 cups cooked dark turkey meat (pulled in bite-size pieces)
1/4 cup heavy cream
1 cup frozen baby peas
