2 Large Bunches Russian kale, or black kale, stems removed and roughly chopped (about 20 cups)
1 sourdough loaf, cut into 1/2-inch Slices
6 tablespoons butter, plus more
1/2 cup shallots, sliced
1 teaspoon red pepper flakes
1/4 cup all-purpose flour
1 1/2 cups milk
1 1/2 cups heavy cream
1/2 pound gruyere cheese, grated
1/2 pound sharp white cheddar cheese, grated
1/2 cup crème fraiche or sr cream
1/2 cup Parmigiano-Reggiano, freshly grated
1/2 teaspoon Freshly Grated Nutmeg
