½ teaspoon kosher salt

1 cup low-sodium beef stock
2 pounds russet potatoes (peeled and cut into large cubes)
½ cup heavy cream
¼ cup milk
¼ cup freshly shredded Parmesan cheese
3 tablespoons unsalted butter (room temperature (⅜ stick))
½ teaspoon kosher salt
¼ teaspoon ground black pepper
