2 cups chopped yellow or red onion
2 tbsp butter
10 sprigs fresh thyme ((recommended tied together with twine))
1 tbsp minced garlic ((2 large cloves))
2 cups frozen veggie medley with peas, corn, and carrots
2 tbsp all-purpose flour
1 cup beef stock
salt
2.5 lbs Yukon Gold potatoes
1 cup half and half
2 tbsp butter (softened)
1 cup grated cheddar cheese ((about 4 ounces))
