INGREDIENTS
3 cups cauliflower (cut into small florets (tip: prepare veggies and chickpeas while chicken is marinating))
3 cups broccoli (cut into small florets)
1/4 red onion (cut into large slices)
1 1/2 tablespoons olive oil
1/4 tsp sea salt
black pepper
1 cup chickpeas (drained and rinsed)
1/2 tsp sweet paprika
2 skinless boneless chicken thighs (see notes to use another cut of chicken)
1 tbsp za’atar spice mix
1 tbsp lemon juice
1/2 cup tahini paste
1 small garlic (pressed or minced very thinly)
1/4 cup lemon juice
1/2 cup ice water
1/4 tsp sea salt
pinch of cumin
