Sheet-Pan French Toast

1 1/2 cup (180g) raspberries fresh preferred
2 tablespoons (25g) granulated sugar
1 tablespoon (14g) lemon juice
zest of 1 lemon
1 loaf of brioche challah or milk bread
1 cup (227g) milk
3/4 cup (170g) buttermilk
1 tablespoon King Arthur Pure Vanilla Extract
1/4 teaspoon nutmeg
1/4 teaspoon salt divided
3 large eggs
2 tablespoons (27g) light brown sugar or dark brown sugar
2 tablespoons (28g) unsalted butter cut into 1/2” cubes; cold
