•1 cup yellow onion, roughly chopped
•1/4 cup celery, roughly chopped
•1/3 cup flour
•4 cups clam juice
•2 tbls. sherry
•2 tbls. white wine
•1/2 tsp. kosher salt
•1/4 tsp. Tabasco sauce
•1/2 tsp. Worchestershire sauce
•1/4 tsp. nutmeg
•1/4 tsp. freshly ground white pepper
•1/4 tsp. Old Bay seasoning
•6 sprigs fresh thyme
•1 bay leaf
•4 cups whole milk
•2 cups heavy cream
•1/4 pound lump or backfin crabmeat
•1/8 pound crab roe, if available
