INGREDIENTS

For the shawarma spice mix:

2 tsp sweet paprika

1/2 tsp allspice
•
1/2 tsp cumin
•
1/2 tsp turmeric
•
1/4 tsp cinnamon

1/4 tsp garlic powder

1/4 tsp onion powder

1/4 tsp ginger powder

For the tahini guacamole:
•
2 ripe avocados
•
2 tbsp Mighty Sesame Co. Tahini
•
1 tbsp freshly squeezed lemon juice
•
1/4 tsp salt
•
For the tacos:
•
2 tbsp extra virgin olive oil
•
16oz portabella mushrooms, sliced thick (about 3/4 inch slices )
•
1/4 to 1/2 tsp salt (to taste)
•
3 cucumbers, peeled and diced
•
1/2 pint grape tomatoes, cut into quarters
•
6 corn or flour tortillas (taco size)
•
Fresh cilantro for garnish (optional)
