salt and freshly ground black pepper, to taste

For Goat Cheese:

1 (8 ounce) log goat cheese, cold
•
1 large egg
•
1/2 cup all-purpose flour
•
1 cup panko bread crumbs
•
2 tablespoons flat leaf parsley, minced
•
1/2 teaspoon salt
•
1/4 cup olive oil, for frying
