INGREDIENTS
Bananas Foster sauce:
1 cup butter
2 cups dark brown sugar
½ cup dark rum
2 teaspoons vanilla extract
1 teaspoon cinnamon
8 bananas, peeled and sliced in ¼-inch round slices
In large skillet on medium, melt butter. Stir in sugar, rum, vanilla and cinnamon.
When mixture begins to bubble, add bananas and cook for 2 minutes, stirring now and then. Set aside and keep warm.
Cake:
4 cups sifted cake flour (sift first, then measure)
2 cups granulated sugar
6 teaspoons baking powder
1 teaspoon salt
1 large box banana pudding mix
2 packets or 1 box of Dream Whip powder mix
20-ounce can crushed pineapples, drained
1 cup milk
1 cup shortening
1 teaspoon vanilla extract
1 teaspoon banana extract
6 whole eggs
6 egg whites
2 cups of Bananas Foster sauce
Banana Foster cream cheese icing:
One stick softened butter
2 8-ounce packages softened cream cheese
4 ½ cups powdered sugar
One cup bananas Foster sauce
Beat butter and cream cheese together until light and all lumps disappear.
Slowly beat in powdered sugar until spreadable and add bananas Foster sauce and beat until smooth again. Ice whole cake. Dip icing spreader in hot water to smooth out icing to desired smoothness.
Add crisscross of store-bought caramel sauce in squeeze bottle and finely rolled banana chips for decoration, if desired. Serves 10 to 12
