Serve smoky marinated chicken kebabs with cool, creamy tzatziki sauce

1½ cups plain Greek yogurt
1 Persian cucumber, skin on, finely chopped (3/4 to 1 cup)
1 lemon, juiced, plus more if needed
3 cloves garlic, finely minced
2 tablespoons chopped fresh dill
kosher salt and freshly cracked black pepper
1 tablespoon ground cumin
1½ teaspoons granulated garlic
1½ teaspoons paprika
1/2 teaspoon crushed red pepper flakes
3 tablespoons olive oil, plus more for oiling the grill
2 tablespoons red wine vinegar
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
6 cloves garlic, roughly chopped
2 lemons, 1 juiced and 1 halved, lightly oiled and grilled cut-side down until charred, for serving
3 pounds boneless, skinless chicken thighs and/or breasts, cut into 1¼-inch cubes
store-bought pita bread, grilled until light grill marks appear, for serving
chopped fresh dill, for serving
