Semolina Garlic Swirl Bread

INGREDIENTS
1 head garlic
2 tablespoons (25g) olive oil
1 3/4 cups (283g) semolina flour
1 1/2 cups (177g) King Arthur Unbleached All-Purpose Flour
1 3/4 teaspoons salt
1 cup (227g) water
2 tablespoons (21g) garlic oil or olive oil
2 teaspoons instant yeast
1 large egg yolk (reserve the white for the filling)
roasted garlic from above
1 cup (99g) grated Parmesan
1/2 cup (21g) fresh bread crumbs
1 tablespoon dried Italian herbs (basil oregano parsley)
1 large egg white (reserved from above)
1/8 teaspoon salt
freshly grated Parmesan cheese
