4 Tablespoons ice water
2 pounds Granny Smith Apples, (4 to 5 medium), peeled, cored and thinly sliced, (6 cups)
3 Tablespoons packed light brown sugar
3 Tablespoons granulated sugar
2 Tablespoons all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon grated lemon peel
1/4 teaspoon ground cardamom
1/2 cup chopped walnuts or pecans
1/4 cup PLUS 2 Tablespoons all-purpose flour
1/4 cup PLUS 2 Tablespoons packed light brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cardamom
3 Tablespoons PLUS 1/2 teaspoon cold unsalted butter, cut into bits
