INGREDIENTS
A Scotch Egg is a PERFECT brunch food for a lazy Sunday morning.
It’s traditionally a boiled egg wrapped in sausage meat, coated
in bread crumbs and deep fried. But by baking them less greasy
and Less fat in them.
Serves 4
1 TB Unsalted Butter
1 TB Sherry or other sweet white wine
1/2 cup finely diced Yellow Onion (about half a medium sized onion)
1/2 cup peeled, finely diced Granny Smith Apple (about 1 med. apple)
2 lb ground lean pork or 2 lb ground turkey
7 to 8 pinches of kosher salt
1 teaspoon rubbed sage
1/2 teaspoon pepper
1/2 teaspoon thyme
1/8 teaspoon garlic clove
4 to 6 large eggs, hard boiled (not too large)
1 cup flour
1 large egg ( for egg wash)
2 cups fine dry breadcrumbs 0r 4 to 6 slices of Whole Grain Bread
(I use 9 grain because the texture is amazing)
2 Pinches Red Pepper Flakes (If you like it spicy double that!)
