Scones au Chocolat
"One afternoon, I was driving the kids home from school when they asked me to bake some scones. I asked them what they thought about baking scones with jam inside them. They were not too excited about that idea until Joey suggested, “Why don’t you put chocolate inside them?” “Like pain au chocolat?” I asked. And then at the same time, we all yelled out “scones au chocolat!” Here they are...."
INGREDIENTS

Spray oil, for greasing pan
•
6 tablespoons parve margarine, frozen for 15 minutes
•
2 cups plus 2 tablespoons all-purpose flour, divided
•
2 large eggs, divided
•
1/4 cup sugar
•
1/2 cup parve plain soy milk
•
1 tablespoon baking powder
•
7 ounces parve semisweet chocolate, cut into 3 x 3/4-inch bars
•
1/2 teaspoon salt
